Look at what I eat, you'll see who I am!

Food is an extremely important part of our lives. The expression, ‘we are what we eat’ isn’t only good advice for eating a diet that is healthy and nutritious. The way in 1 _______ the kind of culture or environment that we live in, and the kind of needs we have. There is a reason why people cook and serve food in a certain way.

Spicy food, for example, is eaten in places where the climate can get hot and humid. In Asia, for instance, food can range from mildly spicy to extremely hot. Spices are much more abundant in these countries. But in hot, humid climates food can go bad more easily and spice can act as a natural preservative, 2 _______. Also, eating hot, spicy food makes you sweat, which is a natural way to keep your body temperature down. This is very helpful when you’re struggling with a hot climate.

What about how we eat? In parts of Asia and Africa, it is common to eat with the hands. Food actually tastes much better this way. Eating with the hands or eating with chopsticks, as in South East Asia, is quite tricky and takes a while to get used to it. It is thought that chopsticks were used in the East rather than the knife and fork, 3 _______ rather than meat. Chopsticks were better suited to this. Also in both African and Asian cultures, it is not unusual to eat from a shared dish. In these cultures a lot of importance is given to a sense of community and sharing. Using chopsticks or the fingers could be a way to ensure that people only eat their fair share. Mealtimes are also an important clue as to the culture you come from. In Northern Europe, 4 _______ people would rather eat their dinner earlier. In countries like Greece or Spain, which are much further south, you could end up eating dinner at 10 pm or even later. This is no doubt because it’s sunnier, milder and pleasant to be out until late. Visitors to these countries from the North find themselves 5 _______. In fact, the truth is that lunch is the main meal in these countries. In Spain, it wouldn’t be unusual to eat a three-course-meal with wine at midday, and just eat something light at dinner. The exact reverse used to be true in the UK. Traditionally, the famous English breakfast of fried eggs, bacon and sausages would be eaten in the morning, and then you wouldn’t eat again until early evening, when another heavy meal might be served.

Eating habits have had to change in some areas, however. The traditional English breakfast is no longer a daily meal. It is considered to be too high in fat. And in cultures 6 _______ it is being replaced. It is now more common to follow the Mediterranean style of cooking, in which olive oil is used in small quantities. It is also recommended that meat is eaten less frequently and instead we get our proteins from fish and pulses. In China, for example, where much of the diet is refined, more fibre is recommended.

The fact is that these days, whether you live in Africa, Asia, Europe or Australasia, you could choose to eat any kind of cuisine. The only thing that has stayed constant is that 7 _______, chat and exchange news.
