My name's Ryan Rivera, and although I was born in the States, my surname suggests Mexican origin. The first time I tasted sopes was at my uncle and aunt's house in California (a "sope" is a traditional Mexican dish). I was five years old and I had never travelled to California to visit my dad's family before. When we arrived, my grand- mother was in the kitchen mixing the dough. Expertly, she shaped the dough in her hands into circular discs. Then these perfectly shaped flat cakes were placed in hot oil to make them crispy on the outside. Meanwhile, my aunt and my cousin were making different fillings that would be placed on top of the flat cakes. And I was just looking, amazed and in- terested. The flat cakes were then topped with black beans, crumbled cheese, onions, and red or green sauce. Finally, my grandmother assembled the sopes and served them. After that trip, I looked forward to our next visit to see my family in California. But our visits only happen once a year, so at every family outing to our favourite local Mexican restaurant, I order sopes to satisfy my love for them. My dad, a big fan of sopes, thinks the flavours at the restaurant are authentic. And he often tells me, "Ryan, these sopes taste almost as good as your grandmo- ther's." However, once after a bland and tasteless lunch in the office, I decided to try to make sopes myself. I bought the ingredients at the local Mexican store. The recipe I followed was from the Internet, because my grandmother does not use a recipe. That was the first disadvantage. The second was that I lacked experience in making sopes. I began by mixing the flour with warm water. The recipe called for one tablespoon of salt, but mistakenly, I added a cup of salt. My dough was an inedible, salty mass. Feeling very discour- aged, I threw the dough in the garbage bin and gave up my dream of creating my own sopes. I decided to leave making sopes to the professionals. Even though my attempt to make sopes failed, I still felt the connection to my grandmother by simply trying. And I promised myself that I'll try to learn the art of making sopes from my grandmother during my next visit. Connecting with my grandmother through our enjoyment of food is not an exception in my family. I believe lots of fam- ilies feel the same. Most family gatherings revolve around food. For this reason, people remember the foods served at special holidays when they were young and serve the same meals to their children. And the children don't miss the cui- sine of their ancestors. Whether through enjoying sopes, pizza, or any other food, identity and tradition are important ingredients passed down through generations.
