Worker: Good afternoon. Can I help you?

Inspector: Good afternoon, sir. My name's Johnson. I'm from the Public Health Department. Here's my card. I'm here to look at your kitchens, to check that they are clean and that everything is okay. Can I come in?

Worker: Of course.

Inspector: Thank you.

Inspector: Now, could you show me the way?

Worker: So, here.

Inspector: Okay. Please tell your cooks and kitchen workers not to stop working. I don't want to disturb them. Now, first, can you show me where you keep your meat, please?

Worker: Here it is. We've got two large fridges for meat and a freezer here.

Inspector: Uh-huh. Hmm.

Worker: What are you writing? Is everything okay? These fridges are very new. We bought them last year and we clean them every day.

Inspector: Okay, thank you. Now, I'd like to look at the cupboards. Yes, I see. Pots and pans, knives and forks, very good. Wait a minute. What's that? On the floor. Cheese?

Worker: Oh, is that, uh, well, you see, we had mice in the kitchen and we put those near the cupboards to try to catch them.

Inspector: Oh dear, mice?

Worker: But don't worry, we haven't got any mice now. This cheese is old. We've got a cat that lives in the kitchen. He catches the mice. Look.

Inspector: A cat? In the kitchen?

Worker: Is that bad? He's very clean.

Inspector: You can't have a cat in the kitchen! Now, these sinks. Are they for washing vegetables or dirty plates?

Worker: Uh, both.

Inspector: Both? You wash vegetables in the same sink that you wash dirty dishes? You can't do that!

Worker: But we clean them very well. Hello, Patrick. Patrick works here.

Inspector: Oh wait a minute. He's washing his hands in that sink.

Worker: Oh yes, he's very clean.

Inspector: But it's the same sink! Oh dear, oh dear.

Inspector: Well, the inspection is finished now. I'll send you a full report in a few days. But I can tell you some of the things I saw today which aren't good enough. Animals in the kitchen. Only one sink. Dirty fridges. Cooked and uncooked meat in the same fridge. Dairy foods not put away in the fridge. Food on the floor. Two workers tasting the soup and putting the dirty spoon back into the soup. I'm going to come back again in one month, and I want to see this place cleaner and better organized than now. Goodbye.
